Hi everyone! This is Leah from Inspire and Indulge here with you today. I’m so excited that Kelly has kindly invited me to guest post on her wonderful blog. For those of you that have been following my blog, you know that I’m in the middle of a Paleo challenge. For new readers, that means I’m eating like a caveman would (grass-fed meats, wild caught fish, nuts, veggies, etc) and sharing my Paleo-friendly recipes during the process.

Today I have a spectacular side-dish that anyone (Paleo or not) may like to indulge in. Baked chili lime sweet potato fries! The flavors are outstanding and they’re so easy to make.

Start by preheating your oven to 400 degrees (F) and line two baking sheets with aluminum foil. Spray the aluminum foil with a nice coat of olive oil.

Tip: Spraying the baking sheets is key! We’re not going to toss the fries in oil so make sure you spray enough oil on the sheet so the fries won’t stick.

Next, peel your sweet potato and cut into 1/4″ fries.

Carefully lay your french fries on your baking sheets. Even though it takes longer, I place each fry down individually so none of them are touching. This will help them get crispy. Now spray the tops of the fries with another thin coat of olive oil.

Once all the fries have been spread out and coated, sprinkle on your chili powder, onion powder, salt, and pepper.

Pop the pans in the oven for 15 minutes. After 15 minutes, flip the fries – at this point you don’t need to keep them straight and in line anymore. Place the baking sheets back in the oven and cook for another 10-15 minutes.

Let them cool slightly and then squeeze the lime juice on top and enjoy!
