Mom’s Chicken Divan

Most of the time we try to eat healthy around here.  But sometime you just need a little comfort food.  May I introduce you to the perfect dish for those times…My Mom’s Chicken Divan.  Pull up a spoon and enjoy!

Mom’s Chicken Divan

Ingredients:

2 Packages Frozen Broccoli
1 Cup Mayonnaise
1 tsp Lemon Juice
2 Cans Cream Of Chicken Soup
1/2 tsp Curry Powder
1/2 Cup Cheddar Cheese
3 Chicken Breasts, Cooked & Shredded

Directions:

Cook broccoli and drain.  Arrange in a shallow casserole dish in a single layer.  Place chicken on top.  Mix soup, mayo, curry powder and lemon juice together.  Pour over chicken.  Sprinkle with cheese.  Cover and back at 350 degrees for 35 minutes.  Serve with rice.

  3. Sounds easy – my kind of recipe. I don’t keep many canned soups – my kids wont eat them – but I could probably adapt this with a roux made with chicken stock. If I didnt already have chicken in the oven Id have given it a try tonight.
